Crab, Avocado and CBD Pasta
Although avocado is usually thought of as a simple sandwich or guacamole ingredient, in this recipe it combines with herbs and citrus to create a wonderfully creamy raw sauce for pasta. Quick to prepare, this dish is perfect if you organize your ingredients while the water boils and the spaghetti cooks.

| Spaghetti | 340 g |
| Avocados | 2, peeled and pitted |
| Green onions | 1 bunch, roughly chopped |
| Garlic | 1 clove, peeled and chopped |
| Lemon zest and juice | 1 large lemon |
| Fresh parsley | 2 tbsp, chopped |
| Fresh tarragon | 2 tsp, chopped |
| Cooked crab (large chunks) | 450 g |
| Grated Parmesan | 1 tbsp + extra for serving |
| Extra-virgin olive oil | 30 mL |
| CBD oil | 30 mL |
| Salt and pepper | To taste |
| Lemon (wedges) | 1, for serving |
Preparation
1. Bring a large pot of salted water to a boil for the spaghetti.
2. Cook the pasta according to package instructions. Drain, reserving 60 mL of cooking water.
3. In a food processor, blend tarragon, salt, and pepper until smooth. Add avocados, green onions, garlic, lemon zest and juice, parsley, then drizzle in olive oil and CBD oil.
4. Place the spaghetti in a large bowl and toss with the avocado sauce, adding reserved cooking water, 15 mL at a time, to adjust consistency.
5. Serve with crab, sprinkle with Parmesan, and add a squeeze of lemon juice.
